Here's my latest attempt at eating more healthy and making quick meals. Here's the steps
Purchase some of your favorite vegetables, some of your favorite sauces/dressings/condiments, some chicken breasts, and some tortillas
Cut up the vegetables and place them in small refrigerator containers
Cook the chicken on the grill
Cut up the chicken into strips
Cook a cup of rice and package it for refrigeration, too
Package the chicken in bags of about 1/4-1/2 pound (depending on how many people will be eating the wraps)
Freeze all but one package of chicken
Now, all the prep work is done. When you're ready to eat, pull out a tortilla and add some chicken. Cover the chicken with your favorite sauce/dressing, and microwave the whole kit for 30-45 seconds.
Don't forget to warm some rice if you want to include that on your creation!
Add some greens. You do have some greens in your fridge... right?
Next, add the veggies of your choice to round out the wrap
Wrap it up and eat it! Or, if you're taking it for a later meal, wrap it in plastic wrap and think all day long about how good your lunch/dinner will be.
The great thing about this is that you can change up the flavor each and every time by switching up the veggies that you add, and trying different sauces/dressings.
Want a Mexican wrap? Use chicken, iceberg lettuce, salsa, onions, tomatoes, taco-cheese, and some salsa.
Italian? Easy! Roasted pepper bruschetta, chicken, pepperoni, mozzarella cheese, black olives, spinach, and maybe some sun dried tomatoes.
Chinese? Chicken, rice, broccoli, onions, sweet & sour, spinach...
The possibilities are virtually endless. Try some other meats if you're so inclined! |

I would love to have something like that but my mouth gets so so sore when I eat anything with vinegar in it - salad dressings - acid in the tomatoes. I think I could work around some of those things though. Will give it a try. Wish me luck....
